What’s Up, Hungry People?

So, picture this: you’re in Zaofu, the beautiful city from the Legend of Korra, and Sue, the amazing leader of the city, treats you to a feast fit for a king. Seared elephant koi, a refreshing hibiscus root salad, and the most incredible ginger-infused pea tendril dish.

Sounds like a dream, right?

But alas, we live in the real world, where finding those unique ingredients is like trying to find a waterbender in the Fire Nation! Seriously, when was the last time you stumbled upon pea tendrils at your local grocery store? It’s a rare sighting, my friends.

Fear not, though, because I’ve got you covered. I’ve recreated a dish inspired by that fantastic feast in Zaofu—a dish that captures the spirit of the original and is just as delicious. Ladies and gentlemen, I present to you my Ginger-Infused Twice-Baked Potatoes with Snap Peas!

Here’s What You Need

  • Russet potatoes: The main ingredient and base for the dish, providing a starchy and creamy texture.
  • Garlic: Adds a flavorful and aromatic element to the mashed potato filling.
  • Ginger: Infuses the potatoes with a warm and zesty taste, complementing the other flavors.
  • Snap peas: Used as a topping, they add a crisp and vibrant freshness to the dish.

I must say, that chef in Zaofu really knew what they were doing. I took inspiration from their ginger-infused dish and incorporated it into these amazing twice-baked potatoes. Let me tell you, it was a stroke of genius.

I’ve made these potatoes multiple times since then, and they’ve never failed to impress.

Cut the potatoes in half and roast in the oven for about 40 to 50 minutes or until the center of the potatoes has softened and can be easily removed with a spoon or melon baller.

Mash together the insides of the potatoes with the butter, garlic, ginger, and salt and pepper.

Then scoop the filling back into eat potato and bake for another 15-20 minutes. If you were an earth bender, these potatoes would likely be cooked in a clay oven – and if you were lucky enough to have a fire bender friend to help you out, these potatoes would be done in no time at all!

Top the potatoes with snap peas, sour cream, and green onions. I served mine alongside other Zaofu favorites like seared elephant koi and orchid blossom salad.

Tips for Twice Baked Potatoes

  • Perfectly baked potatoes: Ensure the potatoes are fully cooked by testing the centers with a fork before scooping out the filling.
  • Creamy filling: To achieve a smooth and creamy texture, mash the potato centers with the butter, ginger, garlic, salt, and pepper thoroughly.
  • Topping placement: When adding the snap peas as a topping, distribute them evenly across the potatoes for a balanced presentation.
  • Blanching snap peas: To maintain their vibrant color and crispness, blanch the snap peas in boiling water for a few minutes, then immediately transfer them to an ice bath.
  • Customize toppings: Feel free to get creative with additional toppings like grated cheese, crispy bacon bits, or fresh herbs to personalize the dish.
  • Avoid over-mixing: Be careful not to over-mix the filling as it can result in a gluey texture. Stop mashing once the ingredients are well combined.

Ingredients
  

  • 4 russet potatoes
  • 4 tablespoons garlic minced
  • 4 tablespoons ginger minced
  • 8-10 snap peas for topping
  • salt & pepper to taste
  • sour cream for topping

Instructions
 

  • Preheat the oven to 400°F. Wash the potatoes and cut each in half lengthwise. Arrange the potatoes cut side up on a baking sheet and cook for 45-50 minutes or until the centers of the potatoes are tender.
  • Carefully scoop out the center of each potato, leaving about a quarter inch of potato on the sides to keep them sturdy.
  • In a bowl, mash the potato centers with the butter, ginger, garlic, salt, and pepper. Spoon the filling back into the potato skins, then bake again at 400°F for 15-20 minutes.
  • While the potatoes are cooking, bring a pot of water to a boil and add the snap peas. Boil for a few minutes until the peas are bright green and slightly tender. Drain the peas and transfer them to an ice bath to stop the cooking process.
  • Remove the potatoes from the oven and top them with the blanched snap peas. Add sour cream if desired, and garnish with green onions. Serve these delicious twice-baked potatoes to your favorite Avatar and enjoy!
