It's Monday. You're between paychecks. You've had a rough day at work and just want to eat something delicious to make everything feel better. We've all been there, and sometimes, you just need some comfort food to get you back in a good mood. Luckily for me, I find solace in cooking - it's relaxing and therapeutic for me; but, I understand cooking for many people can be stressful and frankly, not fun.

Well if you are feeling down, broke, or simply just want to get dinner on the table as soon as possible, then this is the recipe for you. Chicken Parmesan can be whipped up in about 15 minutes, meaning you get to relax longer and feel fuller.

Begin by dredging the chicken first in flour, then in egg, then back into the flour again. Toss the chicken into a skillet with some oil over medium high heat. While you fry the chicken, boil noodles according to the instructions on the box. I used fettuccine noodles because that's what I dug out of my cupboard, but I've used regular spaghetti noodles, and even shells while I was in college, so your favorite (and cheapest) noodles will surely work.

The most important part to getting this recipe done quickly is using slices of chicken that are on the thin side. I can buy thin sliced chicken breast at my grocer, but sometimes if I find it's still to thick, I might smack it a few times with a frying pan until it's about a quarter of an inch thick. Cook the chicken until it's no longer pink in the middle, about 3-4 minutes per side. Heat up the sauce and arrange the chicken on top of the cooked noodles. Pour the sauce over the noodles and chicken, and top with a substantial amount of Parmesan cheese.

  • 4 thin sliced chicken breasts
  • 1 cup flour
  • 2 eggs, whisked
  • 2 cups marinara sauce
  • 1 cup Parmesan cheese
  • 3 tbsps oil, for frying
  • spaghetti noodles, cooked
  • salt & pepper, to taste
  • parsley, for garnish

  1. Heat 1-2 tablespoons of oil in a skillet over medium high heat. Whisk the eggs, then dredge each chicken breast in the flour, then the eggs, then back into the flour.
  2. Add the breaded chicken into the skillet in batches of two slices of breast for even cooking. Fry until cooked through, about 3-4 minutes per side.
  3. Cook the noodles according to the instructions on the box. Heat the marinara sauce to desired temperature.
  4. Arrange the cooked chicken on a bed of noodles, then pour the marinara sauce over the chicken and noodles. Top with Parmesan cheese and garnish with parsley. Enjoy!
