Nothing beats the beach for a vacation! Lounging in the sand and sun while the waves come crashing's just so relaxing. This past week, I had the pleasure of joining my entire extended family at a fancy beach house to celebrate my uncle's birthday - and of course I had to take advantage of the beach scenery for a blog post or two.

I find baking to be the ultimate stress reliever, so I made some seaside-inspired cookies. We love strolling along the beach looking for shells - and it's always a pleasant surprise (especially for those of us who come from landlocked states) to find a sand dollar.

Cinnamon sugar coated sugar cookies look just like sand dollars! I brushed a little additional cinnamon onto each sliver of almond to help them really stand out as the iconic sand dollar markings.

The best part about these cookies, aside from how perfect they are for a beachy treat, is that they require minimal ingredients but still taste absolutely delicious!

Sand Dollar Cookies

Sand Dollar Cookies


  • 1 cup salted butter
  • 2 ½ cups sugar, divided
  • 1 egg
  • 2 ¼ cups flour
  • 1 tbsp cinnamon + more as needed
  • 1 cup slivered almonds

  1. Preheat the oven to 350F. In the bowl of a stand mixer, beat together the butter, sugar, and egg until smooth. Add the flour 1/2 cup at a time and stir until a lumpy dough forms.
  2. If dough is too sticky, add more flour. If dough is too dry, add a tablespoon of water. Use an ice cream scoop to measure out even sized balls of dough. Roll the dough between your palms until round.
  3. Mix together the remaining cup of sugar with cinnamon, as desired. Gently toss the dough balls in the cinnamon sugar mixture. Arrange on a baking sheet lined with parchment or foil.
  4. Use the flat bottom of a jar or glass to flatten the cookies so they are about 1/2 inch thick. Press five almond slivers into the center of each cookie in a pattern similar to a sand dollar. Bake for 12-15 minutes or until the cookies have puffed up and cooked through.
  5. Brush any remaining cinnamon onto the tops of the slivered almonds to help accentuate the pattern on the cookies. Serve warm or room temperature and seaside! Enjoy!
