“We may be faced with an alarming number of weddings soon. I won’t even know what to call you. Sister… or Mother? “

– Margaery Tyrell to Cersei Lannister

My Game of Thrones themed recipe week continues back in King’s Landing, in the castle after a wedding feast. If you aren’t caught up on the latest season of Game of Thrones, there may be spoilers in this post! You’ve been warned.

Tommen Baratheon was the good that Westeros needed. Once he married Margaery Tyrell and united the Lannister and Tyrell houses, albeit briefly. I’d like to think in an alternate, less violent Game of Thrones universe that Tommen and Margaery lived happily ever after and dined on fine pastries while strolling the gardens.

However, in the real world of Game of Thrones, no one can truly have a happy ending. If King’s Landing wasn’t about to be thrown into mass chaos – what with Cersei on the throne and dragons on the way, that perhaps the citizens of the city would have actually mourned Margaery’s death.

Afterall Margaery, out of all the contenders in the game of thrones, was likely to be the most fair and peaceful of them all. These apple rose tarts are served with raw honey comb on a bed of brie, some of the finest delicacies King’s Landing had to offer and honor the house Tyrell as well as Tommen’s short union with the kindest queen Westeros ever would have had.

“One of my husbands preferred the company of men and was stabbed through the heart. Another was happiest torturing animals and was poisoned at our wedding feast. I must be cursed.”

Ingredients

  • 2 red apples
  • 1 roll phyllo dough
  • 4 raw honey comb cut into 1×1 pieces
  • 1 wheel brie
  • 4 tablespoons lemon juice
  • 3 cups hot water

Instructions

  • Core the apples and slice them thinly. Pour the water in a microwavable bowl and heat for two minutes. Add the lemon juice and apples then microwave for another two minutes. Let the apples soak for at least thirty minutes.
  • Preheat the oven to 350 F. Thaw and unroll the phyllo dough. Cut the phyllo in half and place on a baking sheet lined with parchment or a silicone baking mat.
  • Cut the wheel of brie in half horizontally so you end up with two wheels about 1/2 inch thick. Place the brie, cut side up, in the center of each phyllo dough.
  • Drain the apples and pat dry. Brush with lemon juice, as needed to prevent browning. Tuck slices of apple around the edges of the brie so they just barely touching the wheel. Press more slices of apple around the edge, overlapping slightly. Arrange the remaining apple slices along the top of the brie to form a rose shape. Place a square of raw honey comb in the center to help hold the apples in place.
  • Bake for 15-20 minutes, until the honey comb is melted, the edges of the phyllo are browned and the brie is oozing out between the apple 'petals.' Cool for at least twenty minutes to help the center set. Add the remaining honey comb squares in the center of each rose. Serve at the royal wedding feast (or funeral) and enjoy!
