Let me tell you about the tastiest croustini you'll meet this week: cranberry croustini!

French bread is sliced thin AF and then toasted to golden perfection before being topped generously with goat cheese, prosciutto and - of course - cranberry relish.

It's the easiest appetizier in town - and it just looks like it took hours to assemble. You can through this together quickly before any party. The unique flavors are a huge draw to this delicious app.

A sprinkling of fresh thyme adds a burst of umami flavor and pulls the combination of sweet and savory together.

I love this appetizer because it looks fancy but takes no time at all to put together. I made my favorite cranberry orange relish recipe a few weeks ago and have been looking for excuses to use it up - turns out, croustini is the perfect dish!

If you don't have your own homemade cranberry sauce, you can certainly buy your favorite cranberry sauce brand from the store. Just make sure it's a chunky kind or else the sauce might soak into the croustini too quickly and make the croustini soggy.

I was supposed to be getting married this weekend, but thanks to the 'rona still fear mongering over my shoulder, we had to postpone our big day by a few months so that we could safely celebrate with out families. (Seriously, stay safe out there - I'm just salty this stupid thing made me move my wedding!)

It was depressing to have to move the wedding we spent two years planning, but at least I still have the urge to cook because that's how I express my love.

One thing is for sure, I'll be making this dish for my family on my actual wedding week to express my appreciation for all their help getting everything together.

So this recipe is great for our wedding week (or basically any other big, eventful week) because not only is it delicious but it comes together in just minutes. I can show my family thanks without having to whip up a whole meal from scratch.

Cranberry Prosciutto Goat Cheese Croustini

Ingredients

  • 1 French baguette
  • ¼ cup olive oil
  • 1 tsp salt
  • 8 ozs goat cheese
  • 1 cup cranberry orange relish
  • 8 ozs prosciutto, sliced into strips
  • 3 tbsps fresh thyme

Instructions

  1. Preheat the oven to 420 F. Slice the baguette into 25-30 thin slices, about a quarter to a half inch thick. Brush the slices with olive oil on top then arrange on a baking sheet. Bake for 5-8 minutes, until the bread slices are toasted and golden brown. Remove from oven.
  2. While the croustini are still warm, dollop about 1/2 tablespoon of goat cheese onto each slice. Return to the oven and cook for 2-3 minutes. Spread the softened goat chese across the croustini in an even layer.
  3. Let the croustini cool then spoon about a half teaspoon onto each along with a strip of prosciutto and a sprinkling of thyme. Season with salt, as desired. Serve warm or chilled. Enjoy!
