Looks like we’ll be spending a lot of time outdoors this summer. I’m ready for long bike rides, walks through the park and staying active as much as possible.

So this week I’m teaming up with AmBari Nutrition to make these protein packed energy bites to keep me going all day.


I’ve certainly gained the “quarantine 15” – and unfortunately (or perhaps, fortunately for my waistline) we ended up postponing our June wedding for a few months due to current world circumstances.

However, that’s no excuse not to get back in shape while stuck at home.


I was down nearly 10 lbs at the beginning of the year thanks to cutting out snacking, adding in weight-bands to my workout and eating a high protein diet. It was after a trip to Disney World for my bachelorette party that I fell off the wagon – and the same week, lock downs were initiated and suddenly, I found myself sedentary with time on my hands.

Of course, I am one of those people who hates eating the same thing over and over. I like having choices! For these protein bites, I wanted to make sure I had something tasty AND filling to get me going.

Here’s what you’ll need:

Ingredients
  

FOR S'MORES BITES:

  • 1 package AmBari Milk Chocolate protein powder
  • 2 tablespoons freeze dried marshmallows
  • 2 tablespoons mini chocolate chips
  • 2 graham crackers crushed
  • 2 cups old fashioned oats
  • ¼ cup honey
  • 1 cup water

FOR CHOCOLATE BROWNIE PEANUT BUTTER BITES:

FOR NEW YORK CHEESECAKE BITES:

  • 1 package AmBari New York Cheesecake protein powder
  • 2 graham crackers crushed
  • 2 tablespoons freeze dried strawberries crushed
  • 2 tablespoons chia seeds
  • 2 tablespoons white chocolate chips
  • 2 cups old fashioned oats
  • ¼ cup honey
  • 1 cup water

TROPICAL PROTEIN BITES:

  • 1 package AmBari Aloha Mango protein powder
  • 2 tablespoons freeze dried mango crushed
  • 2 tablespoons dried banana chips
  • 2 tablespoons hemp seeds
  • 2 cups old fashioned oats
  • ¼ cup honey
  • 1 cup water

Instructions
 

  • For each combination: combine all dry ingredients in a large bowl and mix together. Stir in the wet ingredients (honey, peanut butter and water). Let rest for 10 minutes to absorb the moisture.
  • Measure out approximately two tablespoons of each mixture per bite, you don’t want them to be too big. Roll between your hands to form a ball. Repeat with the remaining mix.
  • Cover and chill for at least 24 hours. Store in an air tight container in the fridge for up to 10 days. Enjoy!
