It’s HALLOWEEN which means all things spooky are in the forefront of my mind. I’m a little behind on posting my scary recipes this year – but for good reason. Check out the bottom of this post to see what I mean!

I want my food to be delicious AND creepy looking – none of this “not-so-scary” or Halloween recipes for kids” – I was my food to be straight up freaky looking.

That’s where these prosciutto eyeballs come in. Made with only three ingredients, these incredibly creepy eyeballs will stare you down as you gorge yourself on Halloween treats.

Here’s what you need:

  • blue cheese stuffed olives – other stuffings work too, but the blue cheese gives a creepy “clouded eye” look
  • medium sized mozzarella balls – also called bocconcini
  • thin sliced prosciutto

I was able to find all of these ingredients over in my local grocer’s deli area (where they have all those fancy looking cheeses!) Medium sized mozzarella pearls are the perfect size to shape into spooky eyeballs.

Have fun making your eyes look creepy AF! Once everything is assembled, they seriously look realistic.

This is truly a last minute Halloween recipe – it comes together in literal seconds. Just use a melon baller to scoop out the mozzarella eye socket, pop in half of a blue cheese stuffed olive and wrap the hole thing in prosciutto.

The easy nature of this creepy recipe made it PERFECT to display on Good Morning America!

That’s right folks, yours truly hosted the Halloween recipe segment for this year’s GMA Halloween Special!

In case you missed it live, you can catch my segment below.
