Halloumi to introduce my new favorite appetizer: bacon wrapped cheese stuffed jalapeños.

With the holidays right around the corner from summer, some of us like to cling to the warmth and flavors the summertime brings. To help us all dream of spring, these jalapeños are stuffed with halloumi, a traditionally summer cheese meant to be grilled.

That’s right, halloumi doesn’t melt like your every day cheese – instead it turns a beautiful golden brown on the outside and gets gooey on the inside.

As with most recipes I like to cook around the holidays, these jalapeño poppers are super simple – just place them under the broiler for about 8-10 minutes until the bacon is cooked and crispy and the halloumi is sweating and browning along the edges.

The spiciness of the jalapeños is downplayed delightfully by the mellow halloumi flavor and saltiness of the bacon. And now I’m dreaming of summer…

Bacon Wrapped Halloumi Jalapeños

Ingredients
  

  • 3 jalapeno
  • 3 strips bacon sliced in half
  • 6 slices halloumi cheese

Instructions
 

  • Preheat the broiler. Cut the jalapeños in half and remove the stem and seeds down the center.
  • Cut the halloumi into slices about 1/8 – 1/4 inch thick. Place the slices of halloumi down the center of the jalapeños and wrap with bacon. Tuck the end of the bacon on the bottom of the jalapeño.
  • Arrange the wrapped jalapeños about 4-5 inches below the broiler. Broil until the bacon has reddened and started to crisp and the halloumi is golden brown and sweating on the sides. Serve hot and enjoy!
