What’s Up, Hungry People!

Summer might be on its last legs, but who says we can’t still have some fun with the grill? I’m a sucker for anything that brings together the sweet and the spicy, which brings us to these ginger & garlic BBQ shrimp kabobs. Trust me, they’re the perfect mix.

Saucin’ It Up!

Whip up a super simple and sticky barbecue sauce using staples you probably already have in your pantry. Think ketchup, honey, and garlic. Toss in a hint of lime, a punch of ginger, and if you’re feeling bold, a good splash of that ultra-spicy hot sauce. Give it all a good whisk. For the best experience, I suggest letting the sauce chill for at least an hour – it gives the flavors time to mingle and shine. I went the extra mile and prepped mine the night before our BBQ, and trust me, it was worth it.

Here’s What You Need:

  • Shrimp: Star of the dish; provides meaty texture and absorbs flavors well.
  • Ketchup: Adds sweetness and tanginess; base for the barbecue sauce.
  • Honey: Natural sweetener; balances out the spicy and tangy elements.
  • Ginger: Brings warmth and a zesty kick; complements the garlic.
  • Garlic: Provides aromatic depth and a robust flavor to the marinade.
  • Lime Juice: Gives a citrusy zing; enhances the freshness of the shrimp.
  • Olive Oil: Helps in binding the sauce together; aids in grilling.
  • Salt & Pepper: Seasoning; enhances the natural flavors of the ingredients.
  • Wooden Skewers: Used for threading and grilling the shrimp easily.
  • Nonstick Spray: Ensures the shrimp doesn’t stick to the grill; aids in easy flipping.

Meat Matters

Now, here’s a tip from your friendly neighborhood self-taught chef: use half of that delightful sauce to marinate your meat. For this cookout, I was vibing with a surf ‘n’ turf theme, so I went with shrimp. But, you can trust this BBQ sauce to shine on almost anything you decide to use. Keep the other half of the sauce for brushing during grilling or maybe even as a zesty dip later on – works wonders with veggies too!

Let’s Cook!

When you’re ready to grill, turn that bad boy up to high. If you’re juggling multiple items on the grill, here’s a pro-tip: add the shrimp kabobs last. They’re speedsters and will cook up in a jiffy – think 1-2 minutes per side.

If your grill isn’t at its hottest, they might need a tad longer. Just keep a watchful eye until you see that beautiful pink hue on both sides of the shrimp.

Ginger & Garlic BBQ Shrimp Kabobs Tips:

  • Marinating Time: Longer marination yields more flavorful shrimp; consider overnight for best results.
  • Skewer Soaking: Soak skewers longer to prevent burning on the grill.
  • Grill Monitoring: Shrimp cooks quickly; overcooking makes them rubbery. Keep a close eye!
  • Sauce Storage: Store any leftover sauce in an airtight container in the fridge for up to a week.
  • Alternative Proteins: The BBQ sauce works well with chicken or tofu for variety.
  • Sauce Thickness: If sauce is too thick, thin it out with a splash of water or more lime juice.

I paired these juicy shrimp kabobs with a hearty prime steak, a uniquely charred onion lotus, sautéed broccolini and white asparagus, and of course, some grill-roasted corn. Stay tuned, because those recipes are on the way!

Instructions

  • In a small bowl, whisk together the ketchup, honey, ginger, garlic, lime juice, and olive oil. Season with salt and pepper, to taste. Chill for at least one hour, or overnight, for the flavor to fully develop.
  • In another bowl, saturate the wooden skewers in water for at least one hour. Marinate the shrimp in half the sauce for at least one hour prior to grilling. Reserve the other half of the sauce for later (do not use the same sauce that the shrimp soaked in).
  • Preheat the grill to 400°F. Thread the skewers through the shrimp so the shrimp are just touching. Spray the grill with a nonstick spray, then place the shrimp onto the grill. Monitor closely.
  • Cook the shrimp until pink, about 1-2 minutes per side. Brush the remaining reserved sauce onto the shrimp kabobs and remove from the grill. Serve right away and enjoy!
