Let’s Cook

  • Preheat oven to 400°F. Line a cupcake tin with papers and lightly spray with cooking oil.
  • In one mixing bowl, combine the flour, salt, and baking powder. In another mixing bowl, use a hand mixer to cream together the sugar and butter.
  • Slowly combine the dry ingredients with the wet ingredients. Add the eggs, one at a time, along with the milk until a smooth batter comes together. It should be creamy and not runny.
  • Use an ice cream scoop or measuring cup to evenly fill the cupcake tins so that the papers are about 2/3 full.
  • Bake for 10-12 minutes or until the muffins are puffed up and golden.
  • Cool cupcakes to room temperature.
  • Make the fluff filling by combining the marshmallow fluff, butter and powdered sugar with a hand mixer on low speed. Mix until well combined and the fluff is smooth. Keep at room temperature.
  • Fill the piping bags: one or two with the marshmallow fluff filling and another couple bags with the fudge frosting.
  • Use a jalapeno corer or butter knife to hollow out the center of each cupcake, almost all the way to the bottom.
  • Fill each cupcake with the marshmallow filling.
  • Add the desired tip to the fudge frosting piping bag and pipe a swirl of chocolate frosting on top of the filling to seal it inside the cupcake.
  • Serve room temperture to second years to try to steal their hair for Polyjuice potion. Enjoy!

Notes

TIP: If baking on a humid day, use the convection setting on the oven. Decrease cook times as needed (usually 2-3 minutes less).
