What’s Up, Hungry People
Recently, I’ve been seeing boxes of straight-up Lucky Charms marshmallows for sale. Seriously. No cereal. All marshmallows. And honestly, it’s a childhood dream come true!
These Lucky Charms cereal treats are the PERFECT St. Patrick’s Day dessert – I mean, what else is down to catch the elusive leprechaun at the end of the rainbow? Especially if it means more marshmallows?! These cereal treats are super simple – and the recipe is based off the classic Rice Krispie Treats recipe!
Here’s What You Need
- Lucky Charms cereal: Provides the crunchy base and signature taste.
- Marshmallows: Melts to bind the cereal together with a sweet, gooey texture.
- Dehydrated mini marshmallows (Lucky Charms mini marshmallows): Adds extra marshmallow goodness and fun texture.
- Butter: Helps the marshmallows melt smoothly and adds a rich flavor.
- Spray oil: Keeps everything from sticking to your hands and utensils.
Let’s Cook
First things first, pour the Lucky Charms cereal into a large mixing bowl. Make sure you have a cake pan handy and grease it well with spray oil. Trust me, you don’t want to skip this step.
Melting Magic
Heat a large pot over medium heat and add the butter. Once it’s melted and frothy, toss in the marshmallows. Stir constantly until the marshmallows are completely melted and smooth—no lumps allowed! This step requires a bit of patience, but it’s totally worth it.
Mixing It All Together
Once your marshmallow mixture is ready, pour it over the Lucky Charms cereal in the mixing bowl. Here’s a tip: spray your spatula with oil to keep the sticky situation under control. Stir gently until every bit of cereal is coated in marshmallow goodness. You might need to re-spray the spatula a few times to prevent sticking.
Adding Extra Marshmallow Love
Now, toss in 1 1/2 cups of those dehydrated mini marshmallows. Stir them into the mix for that extra marshmallowy delight.
Setting the Treats
Pour the cereal mixture into the greased cake pan. Lightly spray your hands with oil and gently press the mixture into the corners of the pan. Be careful not to press too hard—you want these treats to stay soft and chewy, not hard as a rock.
The Hardest Part: Waiting
Let the Lucky Charms treats set for 1-3 hours. If you can wait that long, you’re stronger than me! Once they’re set, cut them into 2×2 squares or any shape you like.
Tips and Troubleshooting
- Melting Marshmallows Evenly: Keep stirring constantly to avoid any lumps. Lower the heat if they start to burn.
- Sticky Situations: Keep spray oil handy and use it liberally on utensils and hands to prevent sticking.
- Perfect Consistency: Press the mixture lightly into the pan. Pressing too hard will make the treats tough.
- Quick Cooling: Pop the pan in the fridge for faster setting, but don’t leave it too long, or the treats will be too hard.
- Storage: Keep the treats in an airtight container to maintain their chewy texture for up to a week.
These Lucky Charms marshmallow treats are a fun, nostalgic treat that’s perfect for any occasion, especially St. Patrick’s Day. They’re easy to make and guaranteed to satisfy your sweet tooth with that extra marshmallow goodness. Plus, who doesn’t love a good dose of colorful cereal? Whether you’re making them for a party, a family treat, or just because you can, these sweet squares are sure to bring smiles all around. Give them a try and watch them disappear, just as if they are “Magically Delicious!”
Enjoy every sweet, crunchy bite, Hungry People!
