What’s Up, Hungry People

Even more Harry Potter inspired-recipes! It’s well known throughout the books that Ron Weasley has a sweet tooth – and ice cream treats are no exception.

Knickerbocker glories are a traditional treat in Britain – and while they might also be a Muggle concoction (as seen in the first book on Harry’s trip to the zoo, where he is allowed to finish Dudley’s knickerbocker glory because it didn’t have enough ice cream on top), I’d still like to think that witches and wizards adapted the dessert with their own magical properties.

Ron ends up marrying Hermione, so I think it’s especially likely as Hermione is Muggle-born that Ron took a particular liking to this dessert – mostly because it is insanely easy to make any which way you want.

These knickerbocker glories can be made with a flick of the wrist – er… wand. There is no actual factual recipe – you measure this recipe with your heart. Plus, it’s also well known that Ron wasn’t especially talented at potions, so the less baking involved, the better.

Topped with a simple raspberry and lingonberry coulis, pistachios, and clotted cream (or whipped cream, for the American Muggles here), knickerbocker glories are also packed full of fresh fruit and of course ICE CREAM!

If you’re a Muggle, this ice cream is a great way to reach back to your magical roots – as it’s a dish enjoyed by witches and wizards alike!

Here’s What You Need

  • Lingonberry jam with whole lingonberries: Adds a sweet and slightly tart flavor to the coulis.
  • Fresh raspberries: Provides a fresh, juicy texture and flavor.
  • Lemon juice: Balances the sweetness with a hint of acidity.
  • Sugar or corn syrup: Sweetens the coulis and helps with the consistency.
  • Vanilla ice cream: The creamy base for the sundae.
  • Fresh strawberries: Adds a juicy, sweet, and slightly tangy flavor.
  • Fresh mango: Brings a tropical sweetness to the dessert.
  • Blueberries: Adds a burst of freshness and color.
  • Whipped cream or clotted cream: A rich and creamy topping.
  • Crushed pistachios: Adds a crunchy texture and nutty flavor.

Making the Raspberry Coulis

In a small saucepan over medium-high heat, toss in your fresh raspberries, lingonberry jam, lemon juice, and sugar. Give it a good stir to combine everything. Keep stirring continuously until the raspberries and lingonberries have ‘popped’ and the sugar has completely dissolved. You’ll want to bring this mixture to a simmer and let it cook for about 5-10 minutes, until it’s smooth with a few clumps here and there.

Next, strain your coulis through a fine mesh strainer to get rid of any seeds and pulp. Chill this delightful sauce for at least an hour. Once chilled, transfer it to a squirt bottle or any container that allows you to drizzle it over your ice cream with ease. Keep it chilled until you’re ready to serve.

Assembling the Knickerbocker Glory

Time to assemble your magical treat! Grab your sundae dish and start layering. Alternate scoops of vanilla ice cream with the fresh fruit – strawberries, mango cubes, and blueberries. Sprinkle in some crushed pistachios as you go for that extra crunch.

Once your dish is beautifully layered, top it off with a generous swirl of whipped cream or a dollop of clotted cream. Drizzle your chilled raspberry lingonberry coulis over the top. For that final touch, sprinkle a bit more crushed pistachios.

Additional Tips for Perfect Knickerbocker Glory

  • Chilling the Coulis: Make sure to chill the coulis properly. This will help it thicken and make it easier to drizzle.
  • Fruit Variations: Feel free to mix up the fruits based on what’s in season or what you prefer. Peaches and blackberries work wonderfully too.
  • Layering: For the best presentation, use a clear glass sundae dish. This way, you can see all the beautiful layers.
  • Storing Leftover Coulis: If you have any leftover coulis, store it in the fridge. It can be used as a topping for pancakes, waffles, or even yogurt.
  • Serving Immediately: This dessert is best enjoyed immediately after assembling, so the ice cream doesn’t melt too much and the fruits remain fresh and crisp.
