Rubeus Hagrid, a beloved character from the enchanting world of Harry Potter, has left an indelible mark on our hearts. Who wouldn’t want a loyal, half-giant friend like Hagrid, always ready to stand by your side?

Throughout the books, Hagrid often offers Harry, Ron, and Hermione his famous rock cakes, which they politely decline. However, with just a touch of magic in the kitchen, Hagrid could have created delectable treats like these instead.

So, when I received the Unofficial Harry Potter Cookbook for Christmas, I knew I had to share some of its delights on my blog. And what better way to start than with Harry’s birthday cake? Hagrid’s rock cake, contrary to its name, is actually more like a moist and fluffy chocolate sponge cake. Although it may appear heavy, its texture is surprisingly light.

Slowly pour in the dry mixture, followed by the cocoa powder, and stir until the batter is fully incorporated.

Divide the batter equally into two greased ramekins, ensuring they are well distributed. Place them in the oven and let them bake for approximately 25-30 minutes. I like to level off the tops of my cakes to provide an even surface for the custard to rest on. Remember to allow the cakes to cool completely before attempting to slice off the tops.

While the cakes are cooling, prepare the scrumptious custard. In a saucepan over medium-low heat, combine the cream, milk, cornstarch, and sugar, stirring constantly until the mixture starts to bubble. This ensures a smooth and creamy custard.

Now, it’s time to temper your eggs. Slowly add the eggs into the cream mixture, while continuously stirring. Remove the pan from the heat, and continue stirring until the custard becomes smooth and luscious.

  • Ensure room temperature ingredients: Bring the butter and eggs to room temperature before using them in the recipe. Room temperature ingredients mix more easily and result in a smoother batter.
  • Don’t overmix the batter: Mix the ingredients until they are just combined. Overmixing can result in a tougher texture. It’s okay if there are a few small lumps in the batter.

  • ½ cup whole milk
  • ¼ cup heavy cream
  • ½ cup sugar divided into 1/4 cups
  • 1 ½ tablespoons cornstarch

  • 2 egg yolks
  • 1 teaspoon vanilla

Instructions
 

  • Preheat the oven to 350°F and grease two ramekins. In a small bowl, mix together the flour, baking powder, and salt. Use a stand mixer to beat together the sugar, butter, and eggs until light and fluffy.
  • Slowly add the dry ingredients to the batter, followed by the unsweetened cocoa powder. Stir until completely incorporated.
  • Pour the batter into the prepared ramekins and bake for 25-30 minutes, or until the tops are brown and a toothpick inserted in the center comes out clean.
  • Let the cakes rest in the ramekins for 10 minutes before tipping them out onto a wire cooling rack to cool completely.
  • While the cakes are cooling, prepare the custard filling. In a saucepan over medium-low heat, combine the milk, heavy cream, 1/4 cup sugar, vanilla extract, cornstarch, and a pinch of salt. Stir constantly until the mixture comes to a simmer.
  • In a separate bowl, temper the egg yolks by adding a tablespoon of the hot milk mixture and whisking together. Gradually pour the tempered egg yolks into the saucepan while whisking constantly to prevent scrambling.
  • Continue stirring the custard mixture until it becomes smooth and creamy. Cool for one hour.
  • Spread the cooled custard onto the tops of one of the cakes, then place the other cake on top to make a sandwich.
  • Garnish with powdered sugar and serve with a mug of milk. Enjoy with Hagrid in his hut.
