What’s Up, Hungry People

Yes, you read that title correctly – this rice is ready in just TEN MINUTES!

As a variation on my #HackTheBoxChallenge, this Spanish rice uses 90-second instant rice to really get things moving. Once it’s cooked, you can’t tell the difference between traditionally cooked rice and this rice out of the bag!

And for another PRO TIP: buy your veggies pre-chopped if you’re feeling especially lazy. No shame in using what’s available to make dinner a breeze! I served my rice with my sister challenge, “What’s in My Fridge Door,” where I made easy corn salsa chicken.

The whole meal was ready in less than an hour – how’s that for an efficient weeknight meal?!

Let’s Cook

First, grab a large skillet and heat up a tablespoon of olive oil over medium-high heat. We want it nice and hot to get those veggies going. Toss in your diced onion, red pepper, spicy salsa, and the chopped habanero. Sprinkle in the garlic powder, cumin, and coriander. Now sauté everything until the veggies are tender and the kitchen smells amazing—about 5 minutes should do the trick.

Rice Time

While the veggies are cooking, prepare your 90-second rice according to the package instructions. Super simple, right? Once it’s done, dump the cooked rice into the skillet with your sautéed veggies. Give everything a good stir to make sure the rice is coated with all those delicious flavors.

Finishing Touches

Keep cooking the rice and veggie mix for another 5 to 10 minutes. If you like your rice a bit crispy, go for the full 10 minutes. Stir occasionally to prevent sticking.

Once everything is nicely combined and the rice has absorbed all the flavors, it’s time to serve. Top with some extra chopped green onions for a fresh finish.

Extra Tips for Perfect Spanish Rice

  • Adjust the Heat: If you’re not into super spicy food, you can swap the habanero for a milder pepper like jalapeño, or just skip it altogether.
  • Veggie Varieties: Feel free to add other veggies you have on hand, like corn or black beans, to make the dish even heartier.
  • Flavor Boost: For an extra burst of flavor, add a squeeze of fresh lime juice and a sprinkle of chopped cilantro just before serving.
  • Meal Prep Friendly: This rice keeps well in the fridge for up to three days. Reheat it in a skillet to maintain its texture, adding a splash of water if needed.
  • Protein Pairing: Pair this rice with grilled chicken, shrimp, or even tofu for a complete meal that’s ready in no time.
