It’s summertime, and s’mores are on my mind. But here’s a little secret: I actually prefer the s’more flavor combination more than I enjoy eating traditional s’mores!
Don’t get me wrong, sitting around a bonfire and roasting marshmallows is fun, but when it comes to indulging my sweet tooth, I’d rather have s’more flavored ice cream.
The best part is, this recipe for two ingredient ice cream is incredibly simple, and you can easily customize it to your heart’s content with your favorite toppings!
Here’s What You Need
- Heavy whipping cream: Provides the creamy and rich base for the ice cream.
- Sweetened condensed milk: Sweetens the ice cream base and helps create a smooth texture.
- Crushed graham crackers: Adds a delicious crunch and the classic graham cracker flavor.
- Hershey chocolate bar (broken into chunks): Introduces rich chocolatey goodness throughout the ice cream.
- Marshmallow fluff: Contributes a soft and creamy texture, reminiscent of marshmallows in s’mores.
Let’s Get Started
To start, you’ll need an ice cream base made from just two ingredients: one can of sweetened condensed milk and two cups of heavy whipping cream.
Using a stand mixer on medium-high speed, whip the heavy cream until it reaches soft peaks. This will give your ice cream a light and airy texture.
Next, pour in the sweetened condensed milk and mix until well combined. The goal is to create a smooth and creamy base for your ice cream.
If you feel like the base isn’t sweet enough for your liking, feel free to add a few teaspoons of sugar and mix it in. Remember, this is all about customizing the flavors to suit your preferences.
Now comes the fun part—choosing your toppings! For this particular batch, I decided to go with classic s’more ingredients. I grabbed some graham crackers, a Hershey’s chocolate bar, and a generous spoonful of marshmallow fluff.
I opted for fluff instead of real marshmallows because I was concerned that the real marshmallows might freeze too hard and create an odd texture in the ice cream.
I’m pleased to report that the marshmallow fluff worked like a charm, adding a delightful creaminess to the final result.
You can break up your toppings by hand or, for smaller pieces, use a food processor. I personally enjoy chunky ice cream with lots of delicious bits, so I kept my toppings on the larger side.
Finally, gently fold in your chosen toppings into the ice cream base, making sure they are evenly distributed. Then, transfer the mixture into a container suitable for freezing, and let it chill in the freezer for 6-8 hours, or until firm.
One thing to note is that the marshmallow fluff makes this ice cream extra soft, so I would recommend using a bowl for serving to catch any drips or melty goodness.
Helpful Tips & Tricks
- Soft peaks for whipped cream: When whipping the heavy whipping cream, make sure to stop when you reach soft peaks. Over-whipping can lead to a grainy texture in the ice cream.
- Customize your toppings: Feel free to get creative with your toppings! Add crushed nuts, caramel sauce, or even extra chocolate chunks to enhance the flavor and texture of your ice cream.
- Adjust sweetness to taste: If you prefer a sweeter ice cream, you can add a few teaspoons of sugar to the ice cream base. Taste the mixture before freezing and adjust the sweetness according to your preference.
- Avoid watery ice cream: Ensure that the sealable container you use for freezing is airtight. This prevents ice crystals from forming and keeps the ice cream creamy and smooth.
- Let it thaw slightly: If the ice cream becomes too firm in the freezer, let it thaw for a few minutes at room temperature before scooping. This will make it easier to serve and enjoy.
- Experiment with texture: If you prefer a smoother ice cream, you can process the toppings, such as the graham crackers or chocolate, into finer pieces before folding them into the ice cream base. This will create a more uniform texture throughout.
- Store properly: Once the ice cream is fully frozen, make sure to keep it stored in the coldest part of your freezer to maintain its texture and prevent it from melting and refreezing.
