FOR RASPBERRY COULIS:
- ½ cup ligonberry jam with whole ligonberry
- ¼ cup fresh raspberries
- 1 tablespoon lemon juice
- 1 cup sugar or 1/2 cup corn syrup
FOR ICE CREAM SUNDAES:
- 1 quart vanilla ice cream
- 10 fresh strawberries chopped
- 1 fresh mango cut into cubes
- ½ cup blueberries
- whipped cream or can sub clotted cream, for topping
- crushed pistacchios for topping
In a small sauce pan over medium high heat, add the raspberries, lingonberry jam, lemon juice and sugar. Stir well to combine.
Stir continuously until the raspberries and lingonberries have 'popped' and the sugar is completely dissolved. Bring the mixture to a simmer and cook for 5-10 minutes, until the mixture is smooth with a few clumps.
Strain the coulis through a fine mesh strainer. Chill for at least one hour.
Transfer to a squirt bottle or a container that can be used to drizzle the coulis over the ice cream. Chill until ready to serve.
Assemble the knickerbocker glory by alternating the fresh fruit between layers of ice cream in a sundae dish. Sprinkle in crushed pistacchios, as desired.
Top with whipped cream, crushed pistacchios and a drizzle of raspberry lingonberry coulis. Enjoy at the zoo or at the Burrow with the Weasley family.
