In a large skillet over medium high heat, melt the butter and saute the onion, jalapenos and celery until tender, about 5-6 minutes. Add one can of beer to the veggies and simmer for 30 minutes until the liquid is reduced by half.
Meanwhile, in a large bowl combine the bread cubes, parsley, thyme and rosemary. Season with salt and pepper, to taste. Pour the other can of beer, bottle of hard apple cider and lime juice over the bread cubes. Let soak for about 30 minutes.
Combine the sauted veggie mix into the bread cube mix. Stir gently (be careful not to over stir and turn the bread to mush).
Grease a baking dish then pour in the soaked bread. Sprinkle the shredded mozzarella over the top and poke the colbyjack cheese cubes into the stuffing so every bite has some cheese in it.
Bake for 30-40 minutes, until the moisture as cooked out and the top of the stuffing is firm. Serve warm and enjoy!
