Ingredients

  • 1 French baguette
  • ¼ cup olive oil
  • 1 teaspoon sea salt
  • 8 oz goat cheese
  • 1 cup cranberry orange relish or cranberry preserves
  • 8 oz prosciutto sliced into strips
  • 3 tablespoons fresh thyme

Instructions

  • Preheat the oven to 420 F. Slice the baguette into 25-30 thin slices, about a quarter to a half inch thick. Brush the slices with olive oil on top then arrange on a baking sheet. Bake for 5-8 minutes, until the bread slices are toasted and golden brown. Remove from oven.
  • While the crostini are still warm, dollop about 1/2 tablespoon of goat cheese onto each slice. Return to the oven and cook for 2-3 minutes. Spread the softened goat chese across the crostini in an even layer.
  • Let the crostini cool then spoon about a half teaspoon onto each along with a strip of prosciutto and a sprinkling of thyme. Season with salt, as desired. Serve warm or chilled. Enjoy!
