Cranberry Prosciutto Goat Cheese Crostini

French bread is sliced thin AF and then toasted to golden perfection before being topped generously with goat cheese, prosciutto and - of course - cranberry relish.

- 1 French baguette
- ¼ cup olive oil
- 1 teaspoon sea salt
- 8 oz goat cheese
- 1 cup cranberry orange relish or cranberry preserves
- 8 oz prosciutto sliced into strips
- 3 tablespoons fresh thyme
Preheat the oven to 420 F. Slice the baguette into 25-30 thin slices, about a quarter to a half inch thick. Brush the slices with olive oil on top then arrange on a baking sheet. Bake for 5-8 minutes, until the bread slices are toasted and golden brown. Remove from oven.
While the crostini are still warm, dollop about 1/2 tablespoon of goat cheese onto each slice. Return to the oven and cook for 2-3 minutes. Spread the softened goat chese across the crostini in an even layer.
Let the crostini cool then spoon about a half teaspoon onto each along with a strip of prosciutto and a sprinkling of thyme. Season with salt, as desired. Serve warm or chilled. Enjoy!
