Rainbow Carrot Cole Slaw

Rainbow carrots create ribbons of tasty color throughout this homemade sweet and tangy cole slaw.

- 1 bag shredded cabbage
- 2 rainbow / purple carrots julienned
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 3 tablespoons sugar optional, to taste
- ¼ cup red onion minced
- 2 teaspoons dill seed
- 2 tablespoons spicy brown mustard
- 2 tablespoons Garlic Expressions or your favorite garlic vinaigrette
In a small bowl, combine all ingredients except for the cabbage and carrots. Stir until a thick sauce forms and the sugar has dissolved.
In a separate mixing bowl, toss together the julienned carrots snd shredded cabbage. Pour the sauce over the mix and toss well until coated evenly. Chill for at least one hour for best flavor. Enjoy!
