Tajin Tilapia Tacos with Mango Finger Lime 'Caviar'

Tilapia filets are seasoned with tajin and then topped with a mango finger lime "caviar" and avocado crema.

Ingredients
  

FOR FISH:

  • 4 filets tilapia
  • 1-2 teaspoons tajin per filet

FOR MANGO FINGER LIME CAVIAR:

  • 15 oz diced mango drained
  • ¼ cup shallot minced
  • 2 cloves garlic minced
  • 2 tablespoons cilantro or parsley
  • 1 teaspoon sugar
  • 2 tablespoons apple cider vinegar

FOR AVOCADO CREMA:

  • 1 avocado peeled & pitted
  • ½ cup plain Greek yogurt
  • ½ cup mayonnaise
  • 2 tablespoons water

FOR SERVING:

  • white corn tortillas
  • red cabbage shredded
  • cheddar cheese shredded

Instructions
 

  • Sprinkle the tajin over the tilapia filets. Rest at room temperature for 30 minutes.
  • In a small bowl, combine the ingredients for the mango finger lime caviar. Chill for 30 minutes.
  • In a separate bowl, whisk together the ingredients for the crema. Chill 30 minutes.
  • Preheat the oven or air fryer to 400°F. Bake the tilapia filets for 10-12 minutes, until baked through and the fish flakes apart easily.
  • Use a fork to flake apart the fish filets. Serve alongside the 'caviar' and crema with white corn tortillas and cheddar cheese. Serve warm and assemble as desired. Enjoy!
