Neverland Pie from Hook

Ingredients
  

For Topping

  • 2 cups heavy cream
  • ¼ cup powdered sugar
  • 10 drops blue food gel or color as desired
  • 10 drops green food gel or color as desired

Instructions
 

  • Preheat the oven to 425°F. Lightly roll out the pie crust and use a rolling pin to flatten it into an even circle. Lay the pie crust over the ungreased pie pan. Press firmly into the bottom, trim any excess overhang, and crimp the edges.
  • Prick the bottom of the crust with a fork. Line the inside of the crust with parchment paper. Place pie marbles or dry beans on top of the parchment to weigh down the crust as it bakes. Bake in the oven until it turns a pale golden color, about 10 minutes. Remove from the oven and allow to cool completely.
  • While the crust cools, mix the white chocolate pudding mix with the cream cheese, coconut milk, and whole milk. Stir in the vanilla extract and lime juice. Add the red food dye to reach the desired color. Use a hand mixer to beat the mixture until creamy. The pudding will thicken over about 5 minutes.
  • Pour the filling into the cooled pie crust. Use a spatula to smooth the top. Chill in the refrigerator until set, about 6-8 hours.
  • For the topping, whip the heavy cream and powdered sugar together with the blue and green food dyes until the mixture is fluffy. Transfer the whipped cream to a piping bag or a baggie with the corner snipped off.
  • Decorate the top of the pie with dollops of the colored whipped cream. Add a dollop of a different color in the center to stay true to the movie. Serve immediately and enjoy with a dash of imagination!
