Ingredients
  

  • 3 portabella mushrooms with stems
  • 6 tablespoons butter
  • 6 pearl onions can sub chopped sweet onion
  • 2 teaspoons garlic
  • 1 cup orzo
  • 4 cups chicken or vegetable broth
  • cup whiskey cheese or shredded Parmesan
  • salt & pepper, to taste

Instructions
 

  • Clean your mushrooms and remove the stems. Set the caps aside while you chop the stems.
  • In a large pan over medium-high heat, melt the butter. Then add the onion, garlic, and mushroom stems, and sauté until softened.
  • Add the orzo to the pan and stir to coat it with butter. Then add one cup of stock at a time, stirring constantly, until the orzo has taken in as much moisture as it can. This process typically takes about 25 minutes.
  • Slice your portabella caps paper thin, reserving half for garnishing. Sprinkle the sliced caps over the orzo and stir well to combine, about 5-8 minutes until the mushrooms have softened. Serve garnished with the remaining mushroom slices and enjoy!
