- 3 portabella mushrooms with stems
- 6 tablespoons butter
- 6 pearl onions can sub chopped sweet onion
- 2 teaspoons garlic
- 1 cup orzo
- 4 cups chicken or vegetable broth
- ⅓ cup whiskey cheese or shredded Parmesan
- salt & pepper, to taste
Clean your mushrooms and remove the stems. Set the caps aside while you chop the stems.
In a large pan over medium-high heat, melt the butter. Then add the onion, garlic, and mushroom stems, and sauté until softened.
Add the orzo to the pan and stir to coat it with butter. Then add one cup of stock at a time, stirring constantly, until the orzo has taken in as much moisture as it can. This process typically takes about 25 minutes.
Slice your portabella caps paper thin, reserving half for garnishing. Sprinkle the sliced caps over the orzo and stir well to combine, about 5-8 minutes until the mushrooms have softened. Serve garnished with the remaining mushroom slices and enjoy!
