- 32 oz salmon skin removed
- 1 cup panko
- 3 tablespoons mayonnaise
- 1 tablespoon dijon mustard
- 1 shallot choppd
- 1 tablespoon lemon juice
- salt & pepper to taste
- brioche or Hawaiian buns for serving
- tartar sauce optional, for serving
- arugula for topping
Preheat the oven to 375°F (190°C). Remove the skin from the salmon filets. Use a food processor to grind up the salmon filets until you achieve a ground consistency.
In a large bowl, combine the ground salmon, mayonnaise, dijon mustard, lemon juice, panko, salt, and pepper. Mix well until all the ingredients are fully incorporated.
Form the mixture into patties that are approximately 1 inch thick and 4 inches in diameter.
Grease a baking sheet and arrange the salmon patties on it.
Bake the patties in the preheated oven for about 25 minutes or until they are cooked through. Make sure to keep an eye on them to avoid overcooking and drying out the salmon.
Once cooked, remove the patties from the oven and serve them right away on a Hawaiian bun.
Top the burgers with fresh tartar sauce and a handful of arugula. Enjoy!
