  • Preheat the oven to 375°F (190°C). Wash and peel the sweet potatoes using a potato peeler. Cut them into thin, even-sized strips with a sharp knife.
  • In a large bowl, toss the sweet potato strips with olive oil until they are completely coated. Sprinkle on the sugar, cinnamon, and cayenne pepper.
  • Arrange the sweet potatoes on a greased baking sheet in a single layer.
  • Bake for 15 minutes, then flip the fries and bake for an additional 15 minutes, or until the potatoes are browning and crispy.
  • While the fries are cooking, start making the caramel sauce. In a saucepan over medium-low heat, melt the butter along with the brown sugar. Stir constantly to prevent burning.
  • Once the butter is melted and the brown sugar is incorporated, stir in the honey.
  • Gradually add the evaporated milk to the saucepan while stirring continuously until the sauce thickens and becomes smooth.
  • Let the caramel sauce rest on the stove over the lowest heat setting (or 'warm') until the fries are ready, stirring occasionally.
  • Remove the sweet potato fries from the oven. If desired, sprinkle additional sugar and cinnamon on top of the fries for extra flavor. Serve them right away alongside the caramel sauce. Enjoy!
