Omelette Burgers

Juicy chorizo and ground beef patties nestled between fluffy omelette circles, sandwiched in English muffins for a unique twist on a burger!

Ingredients
  

  • 6 eggs
  • 4 oz spicy chorizo
  • 4 oz ground beef
  • ¼ cup sour cream
  • ½ cup brown sugar
  • 4 tablespoons heavy whipping cream
  • 2 tablespoons red onion chopped
  • 2 tablespoons red/orange/yellow bell peppers chopped
  • 2 tablespoons cherry tomatoes chopped
  • 2 English muffins
  • 4 tablespoons vegetable oil for sauting
  • salt & pepper to taste

OPTIONAL TOPPINGS:

  • ketchup
  • mustard
  • avocados sliced
  • tomatoes sliced
  • crispy bacon

Instructions
 

  • Combine the chorizo, ground beef, brown sugar, and a pinch of salt and pepper in a mixing bowl.
  • Heat a skillet over medium-high heat and sear the burger patties on each side until cooked through, approximately 3-4 minutes per side. Remove the patties from the pan and keep them warm.
  • In a separate pan, heat the vegetable oil over medium heat and add the chopped veggies (red onion, bell peppers, and cherry tomatoes). Sauté until the onions become translucent and the peppers begin to brown.
  • While the patties and veggies are cooking, whisk together 3 of the eggs, half of the sour cream, half of the heavy whipping cream, and a pinch of salt and pepper in a bowl. Beat until fluffy.
  • Add an additional tablespoon of oil to the pan with the veggies and ensure that there are no dry spots on the pan. Pour the whisked egg mixture over the top of the veggies.
  • Allow the eggs to cook for 1-2 minutes, occasionally pushing the sides up to let the uncooked egg come in contact with the hot pan. Continue cooking for another 2-3 minutes until the top of the omelette has only a few wet spots left. Flip the omelette and cook for an additional 2-3 minutes, or until the omelette is cooked through.
  • Transfer the omelette to a cutting board and use a mason jar ring or any circular object to cut 3 evenly sized circles out of the omelette.
  • Split the English muffins into two pieces and arrange the omelette circles on top of the burger patties. Sandwich them between the English muffin slices.
  • Top your Omelette Burgers with your favorite burger toppings such as ketchup, mustard, sliced avocados, sliced tomatoes, or crispy bacon. Enjoy!
