Ingredients
  

  • 16 oz rainbow roasting potatoes chopped into halves
  • 1 whole parsnip skinned & chopped
  • 3 whole carrots skinned & chopped
  • 2 whole radishes chopped
  • 1 cup pearl onions skinned (can sub frozen pearl onions)
  • 2 tablespoons garlic minced
  • 1 whole leek chopped to root
  • 8 tablespoons butter
  • 3 tablespoons vegetable oil
  • salt & pepper to taste
  • fresh parsley for topping

Instructions
 

  • Wash and chop all the vegetables. Toss the vegetables in the oil.
  • Arrange the veggies in a roasting pan. Dot them with butter. Season generously with salt and pepper.
  • Cover the roasting pan and roast the vegetables at 375°F for 45 minutes, or until they are tender enough to prick with a fork. Gently stir the vegetables to ensure they are cooking evenly, then continue to roast them uncovered for an additional 15 to 25 minutes. This will ensure that they brown and cook through completely.
  • To finish, garnish with fresh parsley and season with additional salt and pepper, as desired. Serve these alongside some Baratheon boar ribs.
