  • Preheat the oven to 375°F. In a small bowl, whisk together the yogurt and maple syrup until smooth. Refrigerate yogurt until ready to serve.
  • Prepare the pork chops by patting them dry, tossing in flour, dipping into the whisked egg, and finally into the panko until a thick crust has formed. Cover the pork chops completely with breading.
  • Place the pork chops onto a baking sheet and put them into the preheated oven for 20-25 minutes, or until the internal temperature reaches 160°F.
  • While the pork chops are cooking, preheat and grease the waffle iron. Whisk together the flour, milk, egg, sugar, melted butter, baking powder, and a pinch of salt. The waffle batter should be thick but smooth.
  • Using a measuring cup, pour the batter in 1/2 cup increments onto the preheated waffle iron. Cook waffles according to the waffle iron instructions, about 3-4 minutes per side.
  • Remove the pork chops from the oven when ready and let them rest while the waffles finish cooking.
  • Arrange the pork chops on top of the waffles and drizzle on the maple yogurt sauce. Garnish with slices of bacon, as desired. Serve breakfast for dinner, and enjoy!
