Preheat the oven to 400°F. Place the brie cheese in the center of a cast iron skillet.
Pour the maple syrup over the brie, ensuring it covers the cheese up to the edges. Try not to let the syrup overflow the top of the brie, as excess syrup in the skillet may start to burn.
Sprinkle the thyme evenly over the top of the brie.
Bake for 15 to 20 minutes, or until the center of the brie is slightly puffed and wobbles when gently shaken.
Remove the skillet from the oven. Cut a slit from the center of the brie to the edge to allow for easy dipping.
Serve immediately with crostini, fresh fruit, and vegetables. Enjoy!
