FOR PANCAKES
- 2 cups whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 ½ cups buttermilk
- 2 eggs
- 1 tablespoon honey
FOR SIDES
- 2 eggs whisked, for scrambling
- 4 cups cooked seasoned home fries for serving
- 8-10 strips cooked bacon for serving
FOR UNCLES' "FOOD"
- 1 package Twinkies
- 1 package Zebra Cakes
- 1 package cupcakes
- 1 package chocolate covered donuts
- 1 package powdered donuts
- ice cream, chocolate sauce, etc.
Before starting, squeeze the oranges using a juicer. Strain out the pulp. Chill until ready to serve.
Prepare the precooked home fries according to the instructions on the packaging.
Preheat a griddle or large skillet to 350°F. In a bowl, whisk together the whole wheat flour, baking powder, baking soda and salt.
Stir the buttermilk, eggs and honey into the dry ingredients until a smooth batter forms. The batter should be thick but also run off the spoon easily.
Transfer the batter to a pancake dispenser (if using) and measure out approximately 1/4 cup per pancake. When bubbles are breaking through to the uncooked side, about 1-2 minutes, flip the pancake and cook through - another 2-3 minutes.
While the pancakes are cooking, fry the bacon until crisp and scramble the eggs.
Serve pancakes warm alongside the bacon, eggs and potatoes and a glass of chilled OJ. Add a small dollop of butter and a generous drizzle of syrup. Plate up the sweets for the trio of uncles (and dessert!). Enjoy!
