Kat's Pancake Breakfast from Casper the Friendly Ghost

Whip up a breakfast feast inspired by the 1995 movie Casper, complete with fluffy whole wheat pancakes and a spread fit for a trio of mischievous ghosts.

Ingredients
  

FOR PANCAKES

  • 2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 ½ cups buttermilk
  • 2 eggs
  • 1 tablespoon honey

FOR ORANGE JUICE

  • 6-12 oranges juiced

FOR SIDES

  • 2 eggs whisked, for scrambling
  • 4 cups cooked seasoned home fries for serving
  • 8-10 strips cooked bacon for serving

FOR UNCLES' "FOOD"

  • 1 package Twinkies
  • 1 package Zebra Cakes
  • 1 package cupcakes
  • 1 package chocolate covered donuts
  • 1 package powdered donuts
  • ice cream, chocolate sauce, etc.

Instructions
 

  • Before starting, squeeze the oranges using a juicer. Strain out the pulp. Chill until ready to serve.
  • Prepare the precooked home fries according to the instructions on the packaging.
  • Preheat a griddle or large skillet to 350°F. In a bowl, whisk together the whole wheat flour, baking powder, baking soda and salt.
  • Stir the buttermilk, eggs and honey into the dry ingredients until a smooth batter forms. The batter should be thick but also run off the spoon easily.
  • Transfer the batter to a pancake dispenser (if using) and measure out approximately 1/4 cup per pancake. When bubbles are breaking through to the uncooked side, about 1-2 minutes, flip the pancake and cook through - another 2-3 minutes.
  • While the pancakes are cooking, fry the bacon until crisp and scramble the eggs.
  • Serve pancakes warm alongside the bacon, eggs and potatoes and a glass of chilled OJ. Add a small dollop of butter and a generous drizzle of syrup. Plate up the sweets for the trio of uncles (and dessert!). Enjoy!
