- 1 loaf French baguette
- 1 package lox sliced
- 1 cup large curd cottage cheese
- ½ tablespoon capers
- 1 tablespoon reserved juice from capers
- 1 tablespoon red onion finely minced
- 3-4 tablespoons olive oil for brushing
Prepare the mignonette (recipe below). Preheat the oven to 375°F. Use a serrated knife to cut the baguette into 1/2 inch thick slices. Arrange the slices on a baking sheet then lightly brush each slice with olive oil. Toast the bread until crispy and just beginning to brown, about 10-15 minutes.
When the croustini have cooled, spoon about a quarter to half tablespoon of cottage cheese onto the center of each toast (reserve half of the toast for Gollum's Tartine, if making).
Place a piece of lox onto the top of the cottage cheese then sprinkle about a half teaspoon of mignonette onto each toast.
Garnish each toast with a tiny sprig of fresh dill. Serve right away while marathoning Lord of the Rings. Enjoy!
