- 1 English cucumber (seedless) chopped
- 2 cups mango chopped
- 1 cup sweet onion chopped
- ½ cup red onion chopped
- 1 jalapeno or habaneo chopped
- 4 cloves garlic minced
- 5 strawberries diced
- 4 tablespoons lemon juice
- ¼ cup white vinegar
- ¼ cup fresh cilantro chopped
- ¼ cup sugar
- pinch salt & pepper to taste
Chop the cucumber, mangoes, onions (sweet and red), jalapeno or habanero, garlic, and strawberries. Combine them in a large bowl.
Add the lemon juice, white vinegar, fresh cilantro, sugar, and a pinch of salt and pepper to the bowl. Stir gently with a wooden spoon to combine all the ingredients.
The salsa can be served right away, but it generally tastes better if cooled for about an hour prior to serving. This allows the flavors to meld together.
Serve the mango salsa with tortilla chips and enjoy!
