Cheesecake STUFFED Strawberries

- 1 package fresh strawberries
- 1 package fresh blueberries
- 8 oz cream cheese room temperature
- 1 teaspoon lemon juice
- 1 teaspoon vanilla
- 2 graham crackers crushed
Wash and dry the strawberries. Using a sharp knife, cut off the top of each strawberry where the red transitions into white. Trim the bottom of the strawberry so it can stand on its own. Tilt the knife slightly and trace along the white line on the inside of the strawberry to hull it.
Combine the cream cheese, lemon juice, and vanilla in a small bowl. Transfer the mixture into a piping bag and pipe enough of the mix into each strawberry's cavity to overfill it.
Let the strawberries chill if not serving right away. Dip the top of each cream cheese-filled strawberry into the crushed graham crackers.
For an added garnish, dab a bit more cheesecake filling on top of each strawberry and adorn with a blueberry. Chill for at least one hour and then serve. Enjoy!
