I recently bought a large can of lump crab meat for a crab cake recipe where I only needed about half of the can. Unsure what to do with the remaining crab, and the weekly challenge being sandwiches, I decided to see what happened when I combined the two.


And I ended up with this. In all of its deliciously cheesy crabby goodness.

Grilled Crab & Cheese | Sandwiches | Week 45

Prep Time: 5 minutes

Cook Time: 6-7 minutes

Makes 2 sandwiches

Ingredients:

  • 2 cups lump crab meat
  • 2 tablespoons mayonnaise
  • 1/4 cup gruyere (+ more for optional additional cheesiness)
  • 1/4 cup white onion, chopped
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley
  • 4 tablespoons butter (+ more, as needed for keeping the pan greased)
  • 4 thick slices of sour dough bread

Here's How:

  1. Combine the crab meat with the mayonnaise, Gruyere, onion, cayenne pepper, lemon juice, and parsley.
  2. Spread the crab filling over one slice of sour dough. Grate additional Gruyere over the crab and place a second slice on top to create a sandwich. Repeat with the remaining crab and slices of bread.
  3. Melt 2 tablespoons of butter in the pan then add the sandwiches, one at a time (or in pairs in larger pans). Grill 2-3 minutes or until the bread is golden brown. Flip and cook another 2-3 minutes or until the bread is browned and the crab is cooked through and the cheese is melted.
  4. Slice, serve, and enjoy!
