It's soup season, despite what El Niño might have to say about this crazy warm weather.

Even though it was nearly 70 degrees on Christmas in Ohio and we have gotten but a dusting of snow, my body is still craving the warmth of the season that can only be found in soup. This simple tomato soup is chunky and oh so filling. Seriously, once you take one bite, you won't be able to stop eating. Add some grilled cheese to the mix, and you've got a match made in foodie heaven. Just wrap yourself in a nice warm blanket and enjoy!

  • 46 ozs tomato juice
  • 16 ozs diced tomato
  • 8 tbsps butter
  • 2 cups white onion, chopped
  • 3 tbsps garlic, minced
  • 1 tsp paprika
  • 1 tsp red pepper flakes
  • 3 tbsps parsley
  • 3 tbsps oregano
  • ¼ cup sugar
  • 1 tsp chicken base
  • 1 ½ cups heavy whipping cream
  • mozzarella cheese, optional

  1. In a large soup pan over medium high heat, add the stick of butter followed by the chopped onion. Let the onion soften for about 3-4 minutes.
  2. Add the chopped carrots to the pan and saute until tender. Pour in the diced tomatoes without draining. Stir to combine.
  3. Stir in the garlic, paprika, red pepper flakes, oregano and parsley. Let simmer for a few minutes then add the sugar. Simmer for an additional 3-5 minutes.
  4. Pour in the tomato juice and stir in the chicken base. Bring the soup to a rolling boil for 2-3 minutes, then reduce the heat to medium and let the soup simmer for 10-15 minutes.
  5. Reduce the heat to low and add the heavy cream. Stir well. Make grilled cheese while the soup simmers for another 5 minutes.
  6. Serve right away with grilled cheese and enjoy!
